Roasted lobster with
parsley and bread crumbs
Serves 2
Ingredients:
2 live lobsters (1 1/2 pounds each), halved lengthwise
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice (from 1 large lemon)
2 tablespoons minced Italian parsley
1/2 teaspoon salt
1/2 teaspoons freshly ground black pepper
2 tablespoons fresh bread crumbs
Preparation:
Preheat the oven to 375ºF.
Extract the tail meat from the lobster shells and place in a 12-inch roasting
pan(reserve the claws for another use). Drizzle with the olive oil and lemon
juice, sprinkle with the parsley, salt, pepper and bread crumbs, and roast
in the preheated oven for 15 minutes. Serve hot. (Micol
